This new 1,600-room resort and convention center combines upscale accommodations with diverse dining, wellness, and event experiences—including a spa, golf course, and extensive meeting space. JME collaborated with the design architect to plan all back-of-house logistics, supporting both guest-facing and operational needs.
The scope included banquet and in-room dining kitchens, cold and dry storage, employee dining, beverage pump rooms, and a full-service laundry facility—all carefully laid out to ensure efficient flow for food & beverage and housekeeping operations.
The resort offers seven unique dining venues, tailored to a variety of tastes and occasions:
Trabucco – Elegant Italian dining with coastal flavors, handmade pastas, and Italian spirits. Offers private dining for up to 14 and a scenic outdoor patio.
TodoVos – A modern Mexican cantina with tequila tastings, signature margaritas, and flexible private dining for up to 180 guests.
FastBreak – Elevated sports bar with indoor-outdoor seating, a biergarten, lawn games, and classic American fare.
Scratch Market – A 24-hour gourmet marketplace featuring pastries, sandwiches, coffee, gelato, and curated retail items.
Tropics Pool Bar & Grill – Casual poolside dining with tropical drinks and relaxed outdoor seating.
Lobby Bar – Centrally located cocktail bar, ideal for informal gatherings and socializing with views of the resort oasis.
In-Room Dining – Full breakfast, lunch, and dinner service delivered directly to guest rooms.
The resort also specializes in group dining and private events, supported by a dedicated planning team and BOH systems designed to handle large-scale service with ease and efficiency.
