At one of the largest casino resorts in the world, JME designed a high-capacity employee dining operation to serve a full-time staff of over 10,000 working around the clock.
The 1,400-SF serving line features five action stations with display cooking, providing fresh, made-to-order meals for every shift. Upon entering the secure food area, employees swipe in, explore menu options, and collect their meals before heading to the 11,000-SF seating area—complete with beverage stations and complimentary grab-and-go offerings.
Behind the scenes, a 3,000-SF support kitchen houses warewashing, cold storage, and dry storage, ensuring seamless service for one of the most demanding hospitality environments in the world.
