The Gaylord Rockies Resort & Convention Center in Aurora, Colorado, is a 1,501-room destination resort featuring 500,000 square feet of meeting space, a full-service spa, and a wide range of dining and retail experiences.
JME supported the development of nine distinct food and beverage venues—including the reimagined Old Hickory Steakhouse, modern Mexican at Montezuma’s Revenge, and a dual-purpose space that shifts from daytime overflow seating to an evening Asian restaurant. Additional outlets include Italian, sports bar, coffee shops, and in-room dining, all managed in-house to maintain consistent quality and branding.

Why this space works:
Behind the scenes, JME led the planning of critical support infrastructure, including a centralized banquet kitchen, outlet-specific prep areas, a state-of-the-art full-service laundry with an automated overhead bag system, and an employee uniform exchange system. Storage, spa support, and convention logistics areas were all strategically designed to serve high guest volumes and streamline operations across the 84-acre property. These systems ensure the resort can deliver seamless, high-capacity service while maintaining operational efficiency and guest satisfaction.
