This 1.2-million-square-foot convention center and resort in Chula Vista, San Diego County, was designed to host large-scale conferences and events while delivering a high-end hospitality experience.
The resort features three ballrooms (two at 40,000 SF and one at 15,000 SF), over 70 meeting rooms, two expansive event lawns, and a 175,000 SF convention hall.
JME led the design and planning of all culinary operations, including a centralized main kitchen, remote banquet kitchen, and four plating pantries to ensure seamless food service for events of any size.
Why this space works:
The main kitchen includes dedicated butcher and garde manger spaces to support high-volume prep for the resort’s four signature restaurants—a steakhouse, sushi bar, all-day café, and sports bar—as well as a gourmet market and coffee shop. JME also supported the development of eight unique bar venues, including a speakeasy, marina bar, and both adult and family poolside bars. This integrated culinary and service design enables efficient, high-quality delivery across every guest touchpoint, from private dining to large-scale banquets.
